The PostBox by Andrew Spence
The name The Postbox bridges the gap between past and present. It represents the evolution of a building that has served as both a cherished historical landmark and a place of learning — now reborn as a modern culinary destination for Perth.
Every dish they serve is an extension of this rich history, as well as a reflection of the mentorship and guidance received within these very walls. They are not simply opening a restaurant; they are continuing the legacy of a space that has always stood for creativity, growth, and connection.
Andrew's philosophy is to utilise every single part of the animal, and he has a particular passion for working with wild game and the most sustainable fish available as local as possible. He carefully selects each of his suppliers in Scotland and in Europe to ensure he not only sources the very best quality produce, but also keeps food miles as low as possible — all with the aim of promoting a more eco-friendly approach to dining.
